This is a cream puff tree. I made it several years ago for a Christmas party we had.
It is also a traditional French wedding cake called a Croquembouche.
The white blob looking things are accually roses made from mixing
melted chocolate with corn syrup. Its like play doh and you can make all kinds of shapes with it (see below).
Next to it is a cookie tree. |

This cake was accually on the cover of Bon Appetit in December of 1984
(I'm showing my age here) It was really fun to make and the bows are made of the same
chocolate/corn syrup mix as the roses.

I had some business cards made up with the picture of the bow cake on them.
Some neighbors were having a wedding and asked me to make a cake. |

This is a cake I took to state competition I got disqualified because I needed to have two items
and the petite fours were considered one item with the cake. The really sad part was the amazing pastry chef I went
with also got disqualified for the same reason because one of his pieces did not survive the ride to the show.
If we had put our stuff together we would have won, their was nothing else close in that catagory. I guess we were
both too proud.
